A growing number of Japanese people is making miso with healthy ingredients as well as to experience authentic Japan and slow lifestyle.   I myself made my first hand-made miso for the first time in October, 2021, using a wood Misooke/Misodaru made by the only craftsperson left who is still making them in the traditional way.
